I got hungry one day and was looking for something in the fridge when I found a pint of blueberries. I thought, perhaps I can bake a cake or something. I have never done blueberries before. This is my first and boy I love it. It's an addition to my baking list of easy to follow procedures. I usually bake banana bread especially when hubby doesn't eat bananas at home fast enough. I searched on the Internet to get an idea on what to do with the berries. I found a recipe and altered it with what I have on hand. This is really easy.
Ingredients:
2 cups sifted flour
1 cup granulated sugar
1 tbsp. baking powder
1/4 tsp. salt
1 cup bluberries (fresh or frozen)
1 tsp. vanilla (optional)
2 eggs
1 cup whole milk
3 tbsp. vegetable oil or butter
Procedure:
Set your oven to 350 degrees F to preheat it.
Add all the dry ingredients in a mixing bowl - flour, sugar, baking powder, and salt.
In a separate bowl mix 2 eggs, vanilla, milk and oil.
Gradually, add the dry ingredients in the bowl of liquid and mix carefully.
Add the blueberries slowly trying to avoid smashing them.
In a loaf pan the batter goes and pop it in the oven for 1 hour or so.
Enjoy with a whip cream!
